WHITE CHOCOLATE CHEESECAKE

 

This recipe is easy and requires no cooking. Serves 8

 Ingredients

 

For the biscuit base

150 g of Cookie biscuits – crushed
75 g butter

 For the filling

400 gms white chocolate – broken into pieces
65 gms butter
Vanilla pod
500 gms cream cheese
50 gms castor sugar
200 ml whipping cream

 

METHOD

  1. combine the biscuits and the butter and press onto the base of a loose bottomed tin.
  2. Split and remove the seeds from the vanilla pod. Add the seeds and the pod to the chocolate, and butter in a heat proof bowl
  3. Place over a saucepan of simmering (NOT boiling) water until melted. Alternatively this melting process can be done in the microwave. Allow to cool slightly.
  4. In another bowl, mix together cream cheese, sugar and whipping cream to form a smooth consistency.
  5. Remove the vanilla pod from the melted chocolate mixture, and stir into the cream mixture.
  6. Spoon the combined mixture over the biscuit base and place in the fridge to set for 8 to 24 hours.

To serve remove from the fridge ½ hour before use. Remove from the tin and place on a serving plate and decorate with soft fruit or a coulis.
