WHITE CHOCOLATE CHEESECAKE
This recipe is easy
and requires no cooking. Serves 8
Ingredients

For the biscuit
base
150 g of Cookie
biscuits – crushed
75 g butter
For the filling
400 gms white
chocolate – broken into pieces
65 gms butter
Vanilla pod
500 gms cream cheese
50 gms castor sugar
200 ml whipping cream
METHOD
- combine the
biscuits and the butter and press onto the base of a loose bottomed tin.
- Split and
remove the seeds from the vanilla pod. Add the seeds and the pod to the
chocolate, and butter in a heat proof bowl
- Place over a
saucepan of simmering (NOT boiling) water until melted. Alternatively this
melting process can be done in the microwave. Allow to cool slightly.
- In another
bowl, mix together cream cheese, sugar and whipping cream to form a smooth
consistency.
- Remove the
vanilla pod from the melted chocolate mixture, and stir into the cream
mixture.
- Spoon the
combined mixture over the biscuit base and place in the fridge to set for 8
to 24 hours.
To serve remove from the fridge ½ hour before use. Remove
from the tin and place on a serving plate and decorate with soft fruit or a
coulis.
