Herrings with Potatoes and Gherkins

 

                                                                                

INGREDIENTS



225gms smoked herring fillets in oil, cut into small pieces 1cm long 450gms potatoes, peeled and quartered
1 small mild onion,diced coarsely
2/3 large gherkins sliced
pinch of chilli powder to taste
2-3 tablespoons olive oil
ground black pepper and sea salt to taste



METHOD



Boil potatoes in salted water, cooking them until soft, 15-20 minutes. Strain and allow to cool.

Place herring pieces, potatoes, onion, gherkins, chilli powder and olive oil in a bowl. Mix the ingredients together carefully so that the potatoes do not break up. Grind over the black pepper and sea salt, and serve.
