Cake au fromage du Chevre
For 6 people
Preparation 15 minutes, Cooking 45 minutes
INGREDIENTS
300g fresh goats cheese
75g 0f belly of pork cut into small pieces – 1/2 “ cubes (lardons)
3 eggs
200g of cake flour (farine a gateau)
3 soup spoons of olive oil
15 green and de stoned olives
1 sprig of Rosemary
8 Basil leaves Salt and pepper
PREPERATION
With an electric whisk work together the goats cheese and the eggs. Incorporate little by little, the olive oil, the flour and the Rosemary, that has been finely chopped. Salt and Pepper.
Carefully add the olives so as not to crush them, also the bacon and the basil leaves that have been cut up with a scissors.
Put the ingredients into an oiled cake mould and cook for 45 minutes in an oven preheated to 6-7 (200c).
The cake will rise and is ready when golden brown and crusty.
ADVICE The choice of flour is important. Cake flour will have a good dose of yeast incorporated to give the necessary rise. You can replace the rosemary with thyme. If possible cook the cake shortly before eating, as it is best warm.
