Baked Vacherin with Thyme and Garlic



 

Vacherin Mont d'Or is produced in the autumn when the cows are not giving as much milk as is needed for the larger mountain cheeses.
 
 Vacherin is made in a round, weighing approximately 500 grams or about one pound.
 
 This is a brine washed cheese, that has a thick orange-brown velvety crust. It is wrapped on the outer edge in spruce bark. The taste has a "never to be forgotten" flavour. The cheese becomes almost liquid as it matures.

 Ingredients
 500 g Vacherin ideally Vacherin Mont D'Or cheese
 2 thyme sprigs
 1 garlic clove sliced
 
 Method
 
 1. Remove the paper wrapping off the cheese. Take the whole cheese and make tiny indentations in it with the blade of a small sharp knife. Push the sprigs of thyme and the garlic slices into the cheese. Replace in the wooden box..
 
 2. Set the oven to 180°C/gas 4. Wrap the boxed cheese in foil and place it on the middle shelf for about 20 to 25 minutes.
 
 To Serve
 
 Remove the foil and lid and dip in cooked potatoes, or crusty bread.
