This recipe has nothing to do with France but was served up to us by some very good friends after our house was
seriously flooded, and is a very fond memory for us. In addition to ourselves they invited some other friends and we spent the whole day being pampered after our ordeal.

Victorian Breakfast.
Ingredients in brief.
Buck`s Fizz.
Greet guests with Bucks Fizz ( fresh orange juice with champagne or white Burgandy).
Fresh Chilled Grapefruit with Cre`me de Menthe.
Grapefruit cut in half, segment, and place the segments in a bowl. Decorate with fresh mint. Just before serving sprinkle with cold Menthe.
Porridge with Whisky, Demerara Sugar and Butter.
serve with a sprinkle of sugar and MALT whisky.
Creamed Smoked Haddock in Puff Pastry.
Roll the puff pastry out 1/8 thick. Cut into circles with a fluted cutter, chill and then bake blind,( this does not mean cover your eyes), at 220deg. C. Simmer smoked haddock in milk, until cooked. Make a cheese sauce with the milk and at the last minute combine flaked fish with the sauce. After warming through in a double saucepan, about 20 min, fill pastry with haddock, brush top with melted butter. Looks attractive served with fresh tomato and parsley. When ready to serve cut each round in two, and gently warm through again.
Devilled Kidneys. ( With Claret ).
with care remove skin and core the kidneys. Saute finely chopped onions in butter, add a little French mustard. Add the kidneys, seal well, then turn down heat, and simmer 3 or 4 minutes.Flambe with brandy (turn up heat, add brandy which will catch fire and flame for a minute or so ). Serve sprinkled with parsley.
Hearty Lakeland Platter of Bacon, Egg, Sausage, Tomato, Fried Bread, Apple, Mushroom and Potato. (with Burgundy). I will not mention all the ingredients as they are self explanatory. Peel apple lay slices on well buttered tray. Cut tomatoes in half, brush with melted butter, season with salt, SUGAR, and black pepper.
Toast and Baps with Strawberry Jam.
